SaltWorks sells 38 kinds, ranging from Cyprus black lava salt (the black stuff in the mix of salt below) to an Indian salt that smells and tastes like egg yolk. The company cold-smokes salt from the Pacific over alderwood and captures salt from Balinese seawater as it evaporates from wet palm-tree trunks. Pounds sold in 2006: 10 million.
